This afternoon I set out to make Smitten Kitchen’s roasted tomato soup with broiled cheddar since I have been drooling over it since it was posted. I even had great intentions of documenting the process for my neglected little blog. I got off to a good start by photographing the tomatoes before and after they were roasted, and that was the end of that. The heavenly smell was so distracting that I forgot to take pictures of the soup itself. You’ll have to trust me on this one: the soup came out gorgeous and it is every bit as delicious as the photos on the Smitten Kitchen website suggest. Yum yum.
